s the weather warms, it’s time to put away the
drinks that give a rosy glow. Now, the sun is putting
color in our cheeks. And we long for something
cold and refreshing.
OThat’s not an excuse to ice down a glass of wine. But it is
an excuse to try some new favorites. And some of the
Treasure Coast’s most popular night spots shared their ideas
about the hot drinks for the hottest months.
Cocktails are hot right now, said Kitty Wagner, owner of
Undertow in Vero Beach. People like the sophistication of
the martini and all its variations.
“The martini has really made a comeback,” agreed Tara
Carlen, owner of The Ashley Restaurant in downtown
Stuart.
For summer, there is the Appletini. “We make our Granny
Smith Appletini with Sour Apple Pucker and Grey Goose
Vodka,” said Carlen. “And we garnish it with a slice of
Granny Smith apple.”
“Cosmopolitans are always very, very popular, summer
and winter,” said Aldo Rodriguez, trainer with Sam Snead’s.
It’s the cranberry juice that makes the martini-like Cosmo
crisp and refreshing, he said.
The Cosmopolitan was made famous on the television
show Sex in the City. Its variation, a Pomegranate Martini,
was made famous on Oprah.
Undertow offers a signature Pomegranate Martini. “It’s
made with pomegranate juice instead of cranberry juice,”
Wagner said.
Of course, many still long for frozen drinks. The perennial

11⁄4 ounces Stolichnaya
vanilla-flavored vodka
1⁄2 ounce Amaretto liqueur
Pineapple juice to taste
Splash 7-Up
Grenadine
Shake everything but the grenadine
with ice and strain into a martini
glass. Using a pourer, dribble a
small amount of grenadine onto the
side of the glass. Since grenadine is
heavier than the other liquids, it
should slide to the bottom creating
a layered drink. It’s the ‘cherry’ on
the bottom.

MIDORI PINA COLADA
11⁄4 oz Midori melon liqueur
3⁄4 oz light rum
About 6 ounces pina colada mix
Blend with ice and pour into highball
glass. Garnish with orange or
melon slice and a marachino cherry.
