butter mousse. At Bluewater, you can
get a buffalo blue burger, roasted corn
fritters, calamari, tuna nachos and some
of the best wings you have ever tasted.
Colin, 39, and Ian, 38, have brought the
restaurants through the rough part of the
recent economic decline. “The challenging
economy has been a mixed blessing,”
says Colin. “It’s caused us to look
at every aspect of the business and be
conservative where we need to be. We’ve
tightened up the ship, and it’s resulted in
a more profitable situation.”
“Food costs have skyrocketed,” says
Ian. “It’s been difficult to find a middle
ground to offer quality food at good
prices.” Colin says, “We can’t let the
quality go down. It has to remain the
same. We have looked to see how we can
do that in a more cost effective way. We
have reviewed every single item, from
napkins to salt and pepper, to see how
we can economize.”
“Our chefs work hard to bring new
flavors to each restaurant,” says Colin.
“We try new menu items and change
menus regularly to incorporate new and
