Good, solid management is key to a successful restaurant.
“We have quality people in place to make sure the day-to-day
operations work properly,” says Ian. Colin agrees, “For the
last 11 years, we’ve had long-term management that we trust.
It’s a well-oiled machine.” Diego Larroude runs the physical
aspect of the restaurants while Donna Burke oversees the accounting

and business operations.
When their law practice allows, Colin and Ian stop in at
each of their three restaurants several times a week. They
check in on things and will gladly compliment staff on great
work, but will also make suggestions for improvements.
Their goal is to provide the big picture and direction for the
restaurants, but allow staff the opportunity to run the day-today
operation.
“We want people to know that we are very approachable,”
says Ian. “We love it when people let us know about their
experience — good or bad. It’s always rewarding when someone
says they have enjoyed something. But, it’s nice to hear
the complaints, too, because you have the opportunity to fix
whatever is wrong.”
Of the three restaurants, the Tiki has the most volume. “The
physical nature of the Tiki Bar is unique and appeals to a
broader spectrum of ages,” says Colin. “Kids can see the fish
swimming under the dock while their parents relax in the
laid back atmosphere. Also, a tiki (with its open-air thatched
roof) is synonymous with Florida.”
Ian brings home a good point. “Operating three restaurants
is not as easy as practicing law. For those who think it is a
glamorous thing, it’’s not. Go to law school.””
